I get a lot of cookbooks in the mail, but as amazing and gorgeous as pretty much all of them are, there are usually a few that stand out from the rest. Cookie Love was one of those books—I mean, it's called Cookie Love! How could a dessert-obsessed food editor like myself not instantly put aside what I was doing to flip through that?
And this book doesn't fall short of expectation. Pretty much every cookie in this book sounds enticing and delicious, and every image is totally stunning. It's a book I'd keep around just to look at whenever I'm having a bad day—because cookies really do make everything better. Even looking at the cover of this cookbook makes my heart happy.
I was lucky enough to have the chance to test out one of the amazing recipes in this book, and now I'm sharing it with you, plus two other impressive cookies created by author Mindy Segal. So, get ready—these are projects, not quick desserts to whip up on a Wednesday after dinner. But if you're going to spend an entire Saturday baking, these incredibly inspiring treats are actually worth the investment.

The cookie pictured here is for Mindy's Graham Cracker and Passion Fruit Whoopie Cookies. Just take this in for a second—this one cookie contains graham cracker, a passion fruit marshmallow, and two different kinds of chocolate. It maybe seems like it's almost too much going on, like it couldn't all work together—but it works SO well. Tart, fluffy, fruity meringue-like filling held between two crisp shortbread cookies loaded with crushed up graham crackers. And caramelized white chocolate. And as if all that weren't enough, there's an extra drizzle of chocolate on top. Segal says the extra chocolate is optional and recommends dark, but I went with milk chocolate (mostly because we had a bunch lying around in the test kitchen) and would venture to say it is not at all optional—there is never enough chocolate.
The real-deal results: My version of Mindy's brilliant cookies are not, clearly, as pretty as the cookbook version. My chocolate is drippier and meltier, not neat and set, and most of the filling is oozing out the sides instead of staying precisely in place. But you know what? They still tasted damn good. Like, a couple of people I don't know actually followed me out the elevator to see where I was going with them good. Drippy, melty, messy desserts are a very good thing, in my opinion, and even though my attempt didn't turn out photo shoot-ready, the important thing is that they tasted amazing, and Mindy Segal really knows her stuff. After trying out one recipe from this book, though it was time-consuming, I'd trust her other recipes to work out just as wonderfully and taste just as spectacular.
