Can I use canned or frozen green beans instead of fresh?
We love giving the thumbs up to substitutions whenever possible, but in this case, we don’t recommend it. Both canned and frozen green beans are cooked when you get them—and they’re also basically drowned in water, which is the enemy of the deep browning that this recipe is all about. Try to substitute either, and you’ll end up with a sheet pan of soggy, overcooked green beans: hardly delicious. If you’re working with canned green beans, use them where they can truly shine, like in this classic green bean casserole.
Why are we using mozzarella cheese?
This recipe is all about the Parmesan, so at first glance, it might seem weird to add mozzarella to the mix. In this case, it serves as the bridge between the green beans and the Parmesan, bringing the two together in perfect cheesy harmony.

Ingredients
- 1 lb.
fresh green beans, trimmed
- 2 tbsp.
extra-virgin olive oil
- 1/2 tsp.
kosher salt
- 2
cloves garlic, finely chopped
- 1/4 tsp.
freshly ground black pepper, plus more
- 1/2 c.
shredded Parmesan
- 1/4 c.
shredded mozzarella
Directions
- Step 1Preheat oven to 425°. On a large sheet pan, toss green beans with oil and salt. Bake, tossing after 7 minutes, until beans are crisp-tender, 10 to 15 minutes.
- Step 2Toss green beans again; sprinkle with garlic and 1/4 teaspoon pepper. Top with Parmesan and mozzarella.
- Step 3Heat broiler. Broil beans, watching closely, until cheese is melted and golden brown, 2 to 3 minutes. Season with more pepper and serve.
