Lemonade + mimosas? Yes please! These are so simple, you’ll barely need a recipe. We like the 3-parts champagne (one bottle= 3 cups) to 2-parts lemonade, but feel free to just use our proportions as a guide and change it up as you prefer. Make your own lemonade. There are some great store-bought options out there, but nothing compares to homemade. The best part? You can control the amount of sugar. Choose your champagne wisely. By which we mean, you don’t have to use actual champagne. Any sparkling wine will do, so pick the quality and price point you’re comfortable with.
What should you serve these with? We’re fans of mimosas year-round, but these do kind of ring of a hot summer day. Serve them alongside your favorite light breakfast, like crepes, a parfait, or our sunny side up eggs, or go heavier with some blueberry buttermilk pancakes, chicken and waffles, or shakshuka. These lemonade mimosas kind of go with everything, so make a full batch to share at your next brunch.

- Step 1In a shallow dish, mix lemon zest and sugar.
