If you've never thought of having a quesadilla for breakfast, we're here to change that. Like our breakfast crunchwrap supreme, these quesadillas are filled with all your favorite breakfast components. Why choose one when you can have them all? Scrambled eggs, crispy bacon, melty cheese and creamy avocado all combine in these loaded quesadillas, making them a perfect filling breakfast that will keep you full until lunch! What is the best cheese for a quesadilla?
A good quesadilla in our book has lots of melty, stretchy cheese. We chose Monterey Jack and Cheddar for their sharp, melty qualities (and the ideal cheese pulls they create 😍). But, you can switch it up! Add in mozzarella if you prefer, or use freshly shredded pepper jack for a spicier kick.
What other fillings could I use?
Quesadillas are a perfect base for all kinds of breakfast toppings. If you're looking for a vegetarian quesadilla, sweet potato, black beans and avocado would be an easy, tasty option! Looking for a healthier option? Feel free to swap out the bacon for your favorite veggies like peppers, spinach or pickled jalapeño!

Directions
- Step 1Cook bacon in a medium nonstick pan over medium heat until crispy. Drain bacon on a paper towel-lined plate, reserving about 2 tablespoons of bacon fat in the pan.
- Step 2Add onion to the pan and cook, stirring occasionally, until softened, about 5 minutes. Whisk together eggs and sour cream in a medium bowl. Pour egg mixture into the pan. Let set slightly then reduce heat to low. Drag the eggs with a spatula or wooden spoon to create curds. When the eggs are almost cooked to your liking, season with salt and pepper. Fold in chives and remove from heat.
- Step 3Assemble quesadillas. Divide scrambled eggs and bacon between two tortillas. Top each with cheese and avocado slides. Place remaining tortillas on top.
- Step 4One at a time, cook quesadillas in a clean nonstick skillet over medium heat until the bottom tortillas is golden, about 3 minutes. Flip and cook the other side until golden. Repeat with other quesadilla. Serve warm with more sour cream and hot sauce, if desired.
