70 Vegetarian Dinners For Every Night Of The Week
Meatless isn’t just for Mondays anymore.
Nearly 10% of adult Americans consider themselves vegetarian—that’s nearly 33 million people trying to figure out what in the world to eat for dinner. It’s true, we do have a TON of lists dedicated to weeknight dinners filled with steak, chicken, and seafood, but don’t worry: Vegetarians, we’ve got you, too. Whether you’re a lifelong plant-based eater, a curious omnivore, or are just looking for healthy recipe ideas for meatless Mondays, you're guaranteed to love these 70 incredible vegetarian dinners.
Not only are a lot of Americans vegetarian, so is a significant portion of the world's population. The numbers vary, but suffice it to say, many world cuisines put far less of an emphasis on meat, instead focusing on filling, hearty, creative spins on vegetables and plant-based proteins. Check out our Middle Eastern-Mexican fusion green shakshuka, our Jamaican jerk tofu grain bowls, our Indian saag paneer, our Vietnamese tofu banh mi, or our Chinese/Indian gobi manchurian to see what we mean.
And if you're craving classic meat-based comfort foods, but want to keep it veg-friendly? Check out our seitan piccata, our vegan crunchwrap, our spicy fried “chicken” sandwich, our chickpea “tuna” salad, or tempeh Buffalo “wings” to see just how good these meatless dupes can be. You could also skip the overt protein altogether, and just rely on meaty vegetables like eggplant, mushrooms, and cauliflower to fill the void. Try our air fryer cauliflower tacos (so similar to our fish tacos), vegan chicken-fried mushrooms and gravy, ultimate vegetarian Italian sub, or vegan seared "scallops" with succotash. They're so good, we bet you won’t even miss the meat.
One-Pot Vegetarian Chili Mac
Looking for a hearty weeknight dinner? Our smoky vegetarian chili mac is here to save the day! It all comes together in one pot, and it's SUPER versatile. Throw in your favorite bean and pasta shape, melt in your favorite cheese, and top with whatever else you like. (As long as it's crunchy. Fritos are classic, but fried onions, any corn/tortilla chip, or toasted nut will do the trick.)

Bean & Cheese Taquitos
These crispy, cheesy Mexican taquitos are quick and easy to make—even if you don’t want to bust out the big bottle of oil. Instead, brush them with a little oil, then bake them at 450° for around 15 minutes.

Chili Cheese Sweet Potato Casserole
With roasted sweet potatoes and black bean chili layered together under a gooey blanket of cheese, this easy vegetarian weeknight dinner is both incredibly comforting and surprisingly hearty.
Creamy Tortellini Minestrone
We say the more, the merrier when it comes to classic Italian minestrone soup. Sure, typically that's in reference to lots and lots of vegetables, but we took it a different direction and added a touch of creaminess from half-and-half, plus cheese-filled tortellini!

Brie Spaghetti
Nutty, buttery brie is one of our favorite cheeses because it’s approachable yet fancy, and it goes with a wide variety of other flavors. We used it here to make a simple yet impressive pasta dish that's perfect for special occasions and date nights with a vegetarian sweetheart.

Sheet Pan Spanakopita Quesadillas
This innovative recipe combines the savory spinach filling from classic Greek spanakopita and the format and toppings of a great quesadilla. You'll skip spanakopita's standard phyllo dough wrapper and instead use tortillas to make a large-scale quesadilla that bakes in the oven (rather than on the stovetop).
Ultimate Vegetarian Italian Sub
One of our favorite sandwiches is the Italian hero, a sandwich filled to the brim with all manner of cured meat, cheese, and refreshingly crisp vegetables. This vegetarian version is just as good as the original, with planks of zucchini and eggplant instead of meat.

Mushroom Piccata Pasta
This is everything you love about chicken piccata, just without the meat. The sauce is bright and briny and extra buttery. Tip: Take your time with the mushrooms so they really crisp up and turn a dark golden brown. Trust us, the pasta will be that much better for it.

Creamy Kale & Gnocchi Bake
Fans of creamed spinach will absolutely love this hearty, creamy casserole that puts the classic side dish front-and-center on your plate. It's also quick to put together since the gnocchi cook right in the sauce, making the whole thing extra creamy and delicious.

Vegetable Biryani
There are so many different ways you can make and serve this Indian dish, and the ingredients and technique can also vary per region. For ours, we've removed the meat, making this a stellar vegetarian main (and a great way to use up any extra veggies you've got!)

Vegetarian Chili
This vegetarian chili is every bit as warm, comforting, and filling as the classic meat-filled version. Three types of beans do the heavy lifting, while warm spices and jalapeño add a little extra heat. Serve it on a cold night with a slice of homemade cornbread.

Creamy Pumpkin Vodka Sauce & Penne
One of our favorite Italian-American pasta sauces, vodka sauce, just got a super-tasty touch of fall flair with the addition of pumpkin and sage. Most of the alcohol cooks off (and it doesn’t really taste like vodka), so it’s a family-friendly dish you can serve up all season long—or year round!
Butternut Squash Curry
This curry is a one-pot meal with ALL the carbs, vegetables, and creaminess you crave. Butternut squash is toothsome and savory, kale is earthy and green, and coconut milk wraps everything together in a creamy sauce. Yum!

Vegetarian Eggplant Lasagna
This hearty dinner clocks in somewhere between lasagna and eggplant Parm, and it might just be better than both. It's the perfect comforting recipe to add to your Meatless Monday rotation.

Saag Paneer
Chopping all the baby spinach (a whole pound!) is the hardest part of this Indian recipe. To save time, microwave it first so it steams, then chop.

Vegetarian Enchiladas
These enchiladas are stuffed with a hearty combination of corn, beans, and zucchini and topped with two types of cheese. Garnished with avocado, tomato, and cilantro, it's the definition of a healthy and hearty meal.

Falafel Stuffed Peppers
These stuffed peppers deliver all the spicy, garlicky flavors of your favorite falafel sandwich. It's essentially the vegetarian version of classic stuffed peppers, and you'll want to put it in regular rotation.
Slutty Vegan's One Night Stand Burger
If you think that plant-based burgers can't rival meat-based ones, think again. Atlanta-based chain Slutty Vegan's One Night Stand Burger puts the argument to rest with this loaded burger. It's topped with all the fixings, including caramelized red onion, vegan bacon, melty vegan cheese, and a smoky chipotle-lime mayonnaise. 😍
Extra Lemony Seitan Piccata
Some piccata sauces use only lemon juice, but we opt for whole pieces of the fruit for ultimate citrus flavor. After a simmer in a wine-and-broth jacuzzi, the lemon loses its sharp bitterness and becomes sweet and tender. We dig it drizzled over plant-based, high-protein seitan.

Cauliflower Parmesan
Chicken Parmesan is a classic, and it can be hard to give it up when you've stopped eating meat. Never fear, cauliflower is here! When you're really craving good Italian food, make this vegetarian cauli Parm. You won't be disappointed.
