Making spicy mayo at home is as simple as can be: take 1 part spicy condiment of your choice, combine it with 1.5 parts mayonnaise, then add in a touch of sugar and a pinch of salt to make it sing. Don't feel beholden to this ratio: if you like it creamier and milder, just up the mayo.
My preferred spicy condiment to use here is sriracha, and my favorite sriracha brand right now is Sriraja Panich from Thailand. You can also use any bottled hot sauce instead, but just know that the different ingredients and more vinegar-forward formulas of something like Tabasco or Cholula will alter the final taste of your spicy mayo to be a little more tart and spiky than intended.
Once you’ve got a batch made, store it in a clean jar and it’ll keep in the fridge for a week or more, as long as you’re not double-dipping and introducing germs into the jar. Eat with fries, burgers, fried rice, or even fresh fruit!
