Queso fundido is a true party trick. It’s likely the lowest effort, highest reward party dip. It’s always a crowd pleaser, and it’s endlessly adaptable. Do a mix of Monterey, cheddar, manchego, or mozzarella. Basically any of your favorite melty cheeses will work well here. The chorizo is traditional and adds a little heat. Go for the Mexican variety here instead of the Spanish, which is usually dried. Mexican chorizo can be found both cooked and uncooked. We used a pre-cooked version here, but if you can only find uncooked that is fine! Remove it from its casing and start the same by cooking it until cooked through, breaking the meat up with a wooden spoon as you cook.

Ingredients
- 6 oz.
Mexican chorizo, chopped into small pieces
- 1
jalapeño, seeded and minced
- 2 c.
shredded Monterey Jack
- 2 c.
shredded cheddar
Freshly chopped cilantro, for garnish
Tortilla chips, for serving
Directions
- Step 1Preheat oven to 400°. In a medium skillet over medium-high heat, cook chorizo until golden and crispy, 3 to 5 minutes. Add jalapeño and cook until fragrant, 1 minute more.
- Step 2Add cheeses to a small baking dish, about 6"-x--8" and stir in chorizo mixture.
- Step 3Bake until melty and edges are bubbly, 8 to 10 minutes.
- Step 4Top with cilantro and serve with chips.
