Similar to chili oil, chili crisp simply contains more crunchies. With a lower ratio of oil, it packs in more textured ingredients, like sesame seeds (or peanuts), spices (including more chile flakes!), and dehydrated aromatics (like fried shallots). You can use it in the exact same way you use chili oil, but this time, there's more of a built-in snacking component with each bite.

Ingredients
- 1/2 c.
peanut oil
- 1/2 c.
crushed dried red chile flakes of your choice
- 2
cloves garlic, minced
- 3 tbsp.
white sesame seeds or crushed roasted peanuts
- 1 tbsp.
minced ginger
- 2 tsp.
ground Sichuan peppercorns
- 1/2 tsp.
- 3 tbsp.
fried shallot flakes
Directions
- Step 1In a small pot over medium heat, heat oil until starting to smoke, 3 to 4 minutes.
- Step 2Meanwhile, in a medium heatproof bowl or jar, stir chile flakes, garlic, sesame seeds, ginger, peppercorns, and MSG until chiles are damp.
- Step 3Slowly pour hot oil over spices in 4 additions, letting it sizzle through evenly, pausing to stir occasionally before adding the next, and being careful to avoid overflowing. Whisk to incorporate.
- Step 4 Once oil is no longer bubbly, stir in fried shallots and let cool completely.
