With sweet strawberries, herby chicken, tangy feta, and crunchy pecans, this summer salad will make even so-called spinach haters fall in love after just one bite. This light and fresh salad lets sweet flavors shine (we’re looking at you strawberries), but is complemented by the sharp textures and flavors of our other ingredients. Leave out the chicken for a summer side dish, or add it in for a hearty main!
If you truly are someone who isn't into spinach you could go for something like romaine, but we also love this salad with arugula. You could even sneak some in along with the spinach to get that nice peppery bite. While we love this classic combo of flavors, feel free to switch things up! Swap out the feta for creamy goat cheese, switch up the pecans with walnuts, or use your favorite balsamic vinaigrette for the dressing. This adaptable salad is completely versatile to what you have on hand/are craving!
Tip: If you intend on bringing this into work for lunch (you'll be the talk of the office) or if you have leftovers, we recommend holding on the dressing until just before you eat the salad. This will keep the spinach from wilting and maintain freshness.

Directions
- Step 1In a large bowl, whisk the lemon juice with the mustard. While whisking, slowly pour in the oil until the dressing is combined. Season with salt and pepper.
