75 Super-Simple Spring Dinners You'll Be Making Again & Again
Spend your free time in the sunshine, not stressing in the kitchen.
Let's be real: longer days of spring = more time outside and less time in the kitchen. So what better way to celebrate the season with quick and easy spring dinner recipes? Now that we're solidly out of sweater weather, we like to do a bit of spring cleaning in the kitchen, so to speak (creamy feta-lemon penne with asparagus, anyone?). So go ahead and brighten up your dinner routine with all 75 of these spring weeknight dinner recipes for the best spring ever.
With all the sunshine we're enjoying, we thought we'd bring some of that sunshine to our cooking game too. Plus, spring brings so many of our favorite seasonal fruits and vegetables (our spring Cobb salad is packed with many of our MVPs). To help you ease out of the heavy meals of winter (and into light, fresher produce again), we snuck in some seasonal faves into our dinner plans, like in our recipes for strawberry spinach salad, pasta primavera, and one-pan balsamic chicken and asparagus.
Of course, spring can be a bit of a trickster, too. On those less-than-warm days, we have a few lighter, yet still super comforting meals that are the perfect middle ground between winter and spring. We wouldn't be surprised if you opt for our cabbage roll skillet and one-pan creamy spinach-artichoke gnocchi even when it's not chilly out. Bonus: We've included tons more one-skillet meals here, so you can skip the sink of dishes and get back outside for a pickle-ball game/gardening/bike ride. You're so welcome.
One-Pan Lemon Chicken & Orzo
Having easy, one-pan dinners in your back pocket is the key to looking like a hero come mealtime, especially on busy days. This dish is the perfect example: Chicken, orzo, spinach, and feta come together into a complete meal that’s quick enough for a weeknight, but beautiful enough to serve to friends at a dinner party. It’s easy and delicious and, best of all, won’t load up your sink with a ton of dishes.

Creamy Feta-Lemon Penne With Asparagus
The secret to this springy pasta’s success? A tangy “cream” sauce made with rich Greek yogurt and salty feta that provides a bright contrast for the earthy, vegetal flavors of pan-fried asparagus.
Shrimp & Mango Salad
This quick and easy salad is pleasantly crunchy and loaded with fresh ingredients–just what we crave when we want something satisfying that won’t weigh us down. With a bright, savory dressing inspired by June’s miso ginger dressing, this might be our new favorite way to get in our serving of veggies.

Burrata, Pea, & Prosciutto Tortellini
Prosciutto and burrata were already a match made in heaven, but the addition of sweet spring peas takes this pairing to the next level. After a quick cook with aromatics in olive oil, sliced sugar snap peas are tossed with toasted tortellini, herbs, and plenty of lemon zest, then topped with salty, tender prosciutto and a ball of creamy burrata. Despite all of the rich and decadent ingredients in this pasta, the sweet green peas take center stage and make this the ideal springtime pasta.
Nashville Hot Cauliflower
Nashville hot chicken may be king in the land of regional American food, but Nashville hot cauliflower is coming to steal the crown. Coated in hot sauce-spiked buttermilk batter, fried to golden brown perfection, and drizzled with the iconic spicy oil, this vegetarian dinner is crispy, flavorful, and so delicious that its status as a “vegetarian entrée” is almost beside the point.

Honey Mustard Chicken, Tomato & Zucchini Foil Packs
Smothered in sweet honey mustard sauce, these chicken breasts are grilled to perfection, staying super-tender and juicy by cooking inside foil packets. Honey mustard sauce can be as simple as just two ingredients; however, we amped it up for flavor and cooked it slightly to thicken the sauce so it stays on top of the chicken, creating almost a glaze. A duo of mustards is a must for the flavor—grainy mustard is more mild with a pop of texture, while Dijon adds a burst of that signature mustard intensity.

Tex-Mex Meatball Soup
Frying the tortilla strips is totally optional but ridiculously delicious. If you're short on time, sub in crushed tortilla chips! Don't forget to top with avocado!

Whipped Ricotta Pasta
If you’ve ever had whipped ricotta toast, you know how the simple ingredient can elevate even something mundane to new heights. The same goes for pasta. In fact, whipped ricotta might just be one of the best pasta upgrades, especially when it’s paired with a sun-dried tomato sauce and spinach like we did here. In one bowl, you get all the enjoyment of a marinara with the creaminess of something like an Alfredo sauce. You’re going to love the irresistible balance of flavor.

Smash Burgers
Super-thin patties and crispy edges are the draw of a smash burger. The patty is so thin, it’s almost impossible to dry out because it cooks so quickly, and cooking two patties for each burger gives you more of those lacey edges. Using an ungreased skillet or griddle is important, as it gives the ground beef a chance to really stick to the surface and form an irresistible crust.

Feta & Herb Crusted Salmon
For this Mediterranean-inspired salmon, you just arrange your fish on a sheet tray (lined with aluminum foil for the easiest cleanup), sprinkle on the toppings, and bake it for 25 minutes. No flipping, no sticking, and no mess!

Air Fryer Cauliflower Tacos
To get extra crispy "fried" cauliflower, you gotta use your air fryer. This recipe is basically the vegan version of our favorite fish tacos. For the coating, you'll need to make a milk and flour slurry first so that the panko bread crumbs stick to the florets. It's a slightly tedious process, but while one batch of cauliflower is cooking in the air fryer, you can be breading the next round.

Mediterranean Chicken
This one-pot recipe is the perfect way to spruce up chicken breasts with bright Mediterranean flavors without dirtying all the pots and pans in your kitchen. Serve it over some couscous for the perfect bright (and cozy!) spring meal.

One-Pan Creamy Spinach-Artichoke Gnocchi
Do you love spinach & artichoke dip? Us too! So much so we’ve been known to eat it all on its own in lieu of a meal. While we’re all for a chip and dip dinner, that’s not the most family-friendly weeknight meal, so we thought, What if we turned it into a pasta dish? 😍
Grandma Pizza
Grandma pizza has a thin, crispy crust topped first with cheese, then dolloped with a garlicky tomato sauce. It's not the usual way of assembling pizza, but trust us—the cheese melting right into the crust really makes some magic happen.

Grilled Chicken Street Tacos
Nothing beats a street taco—super-juicy, tender meat in a quick grab-and-go format. What makes a taco a street taco? Besides being sold by a vendor right on the sidewalk, one of the main differences is the size of the tortilla. Street tacos are typically prepared by doubling up two smaller corn tortillas, making them easier to eat on the side of the street, in the car, anywhere!

Garlic Parmesan Salmon
We love cooking salmon in the oven as one big fillet. It's the easiest way to serve prepare it and serving it a dinner party always looks impressive. Let everyone go in with a fork and get their own portions community-style. This salmon is covered in plenty of garlic and Parmesan for a tried-and-true favorite, and the cook time couldn't be sweeter.

One-Pan Tuna Pasta
Using canned or jarred tuna in pasta is a cheap and delicious way to add some protein to a meal. Italians do it with pasta al tonno, and Americans do it (in our own way) with tuna noodle casserole. This recipe is a bit of a riff on pasta puttanesca, using familiar ingredients such as capers, anchovies, and olives.

One-Pan Balsamic Chicken and Asparagus
This one-pan meal is one of our most frequented weeknight dinners. What's not to love? It's healthy, easy, and the sauce is a knockout. If you wanted to add a carb (and we’re often in favor of carbs), consider serving it over a bed of brown rice or with a loaf of crusty bread... you'll want something to soak up that sauce!
Steak Frites Salad
In French, steak frites translates to steak and fries, simple as that. A common dish at bistros in France, Belgium, and beyond, we took the concept and combined it with American steakhouse vibes for this all-in-one steak frites salad.

Copycat Chipotle Chicken
While Chipotle has plenty of delicious protein options, when we're creating our burrito bowl masterpieces, we find ourselves going back to their chicken again and again. We found ourselves craving it so often, we knew we had to create a copycat recipe to enjoy homemade burritos and bowls whenever we please. Juicy, slightly spicy and packed full of flavor, this copycat recipe just might rival the real deal thanks to an extra-flavorful marinade and super-tender chicken.
