Ingredients
- 500 g
new potatoes
- 1 tbsp.
oil
- 250 g
cooked chicken, chopped or shredded into very thin pieces
- 150 g
mayonnaise
- 1 tbsp.
curry powder
- 1 tsp.
harissa paste
- 1/4 tsp.
cinnamon
Juice 1/2 lemon
- 50 g
mango chutney
- 50 g
sultanas
Chopped almonds, to serve
- 1/2
bunch coriander, finely chopped, to serve
Directions
- Step 1Pre-heat oven to 200ºC (180ºC Fan). Prick the potatoes with a fork, rub with oil, and season with salt. Arrange on a baking tray and bake for 45mins.
- Step 2Remove and leave to cool for 15 minutes, then cut them in half.
- Step 3Scoop out potato (see tip), leaving a little bit in there, brush them all over with a little more oil, then place them back in the oven, opening side down, for a further 10mins.
- Step 4Meanwhile, in a large bowl, combine mayonnaise, curry powder, harissa, ground cinnamon, mango chutney and lemon juice, and mix until well combined. Add in your chicken and raisins and mix well. Leave to one side.
- Step 5Remove skins from the oven and leave to cool, ideally on a wire rack. Fill up with your coronation chicken and serve on a platter.
