When I say we're OBSESSED with chicken Caesar salad, there's really no denying it... but the way to make sure it's the best you've ever had is a) make your own dressing, b) chargrill your chicken and c) get those lettuce leaves nice and warm. Trust us, you won't regret it.

Ingredients
For the salad
- 2
chicken breasts
- 2 tbsp.
mayonnaise
- 1 tsp.
salt
- 4
baby gem lettuce, or 2 romaine lettuce, halved
- 2
slices sourdough bread
- 1 tbsp.
extra virgin olive oil
For the dressing
- 1
garlic clove, grated
- 1
lemon, juiced
- 4
anchovy fillets, chopped into a paste
- 1 tsp.
Dijon mustard
- 2
egg yolks
- 100 ml
oil
- 1/2 tsp.
black pepper
- 1 tsp.
Worcestershire sauce
- 30 g
Parmesan
Directions
- Step 1Preheat oven to 200ºC (180ºC Fan).
- Step 2In a bowl add chicken breast, mayo and salt and mix well. Get a cast iron griddle pan piping hot, lay your chicken in and leave for 3-4mins until deep brown lines have developed. It will release naturally when the crust has formed, if its tearing or stuck – leave it.
- Step 3 Flip and sear for 2-3mins more, then put into the oven for 6 mins. Remove from pan to cool.
- Step 4Using extra virgin olive oil, drizzle your slices of sourdough and grill in the same pan until crispy and brown, cut into crouton sized squares.
- Step 5To make the dressing add the garlic, lemon juice, Dijon mustard, anchovies and egg yolks in a large bowl to combine.
- Step 6Slowly drizzle the oil, a little at a time, whilst whisking until all the oil is used and the dressing is thick and emulsified. Add your black pepper, Worcestershire and Parmesan.
- Step 7Slice your lettuce in half and put into a hot dry pan, pressing down to get full contact with the pan. After 2-3 mins it should be charred but be careful not to wilt the outer leaves too much.
- Step 8Immediately put onto a plate, drizzle with dressing, add croutons, sliced chicken, more dressing and more Parmesan.
