Delicata squash is a winter squash that doesn't get enough attention. Its small size makes it much easier to handle than other squashes and it cooks much faster. When roasted, the squash gets creamy and sweet and we can't get over how cute the flower shaped slices are!
Can I eat the skin on delicata squash?
Yes! Delicata's skin is edible and is absolutely delicious. Be sure to wash the squash well before roasting as the skin is usually coated in a wax used for preserving the squash.
When can I buy delicata squash?
Delicata squash is available during the fall and winter. They are in season at the same time as other winter squashes like butternut, acorn, and pumpkin!
How should I season delicata squash?
Like most squashes, it's fun to season delicata with both sweet and savory spices. Tossing the squash in curry powder is our favorite way to roast it, but we also love sprinkling cinnamon over it too!

Ingredients
- 2
medium delicata squashes, scrubbed clean
- 2 tbsp.
extra-virgin olive oil
- 1 tsp.
curry powder
Kosher salt
Freshly ground black pepper
Directions
- Step 1Preheat oven to 425°. Cut ends off of squash, then cut in half lengthwise. Scoop out seeds. Cut squash into ½” half moons.
- Step 2On a large baking sheet toss squash with oil and curry powder. Season with salt and pepper.
- Step 3Roast until golden and soft on the inside, about 20 minutes, flipping halfway through.
